How does brining work?
Brining is a great way to add flavor and moisture to your meat.
Brining adds both flavor and moisture to a protein. In its simplest form, brine is a salt and water solution. When you soak a protein in brine, salt will diffuse throughout the protein because there is a higher concentration of salt in the solution than in the protein. The diffused salt adds flavor and makes changes to the protein, causing it to hold more moisture.
