Ancho chili pepper is actually dried poblano pepper, which is a variety of the Capsicum annuum pepper. As you may know, poblano peppers come in different colors depending on how ripe they are when they’re picked. A green poblano is underripe and a red poblano is ripe. Ancho chili peppers come from ripe poblanos, which gives them a hint of sweetness that balances out the mild heat.
